What I Ate Wednesday

It would be WIAW… except is is WIAS – What I Ate Sunday.
Breakfast post gym – Pumpkin Pancakes made this way. No picture…oops. But you can imagine. I topped the pancakes with 1/2 cup greek yogurt and a scoop of peanut butter. Oh and coffee.
Morning snack while studying for my job interview for Monday – apple with cinnomin and holiday tea
Lunch – Left over turkey, cranberry sauce, brie cheese on toasted rye. OMG wonderful. Best ever. And some veggies
Afternoon tea at a Eva’s Cafe in Chicago with a friend. Lots of girl talk. It was a super cute place with a Christmas tree!!

Afternoon snack. I was starving around 4 pm. I wanted everything. I had a random plate: banana, almond butter, hummus and Kashi crackers. Unpictured is a glass of milk and two clementines. Consumed in bed. After the picture I moved and the bananas and hummus got a bit mixed together. It was garlic hummus. Not ideal but still eaten. Note to self – while eating in bed ALWAYS sounds like a great idea, eating in bed NEVER is a good idea.
Dinner – I LOVE beets!! So I decided to make borscht (beet soup) using this recipe. The only change I made was doubling the beans so it was more a substantial meal. I ate mine with spinach, cous cous and a scoop of ricotta cheese. It was SO GOOD. But ONLY make this if you like beets!!! I also roasted up some delicata squash (my second favorite squash type), cauliflower and Brussels sprouts. Yummmmm.
I ALWAYS have a snack before bed. Even if I’m not hungry. But when I’m not hungry, I still WANT to eat something. So I do. I’ve never said I do the intuitive eating thing. I don’t eat in the morning before I work out (usually) so I like to be nice and full when I go to sleep. For the past, I dunno, 6 months, I’ve had this every night before bed. Call it a quirk, call it an obsession, call it OCD. I call it wonderful. Scoop of Sunflower Protein Powder, plain low-fat yogurt, and pumpkin pie spice. And one or two (or twelve) spoonfuls of peanut butter. If you look notice in the picture it seems I am putting curry powder in my yogurt. DO NOT DO THIS. It doesn’t really taste that great. This was an error and I suggest Trader Joe’s get a little more creative with their spice jars. Perhaps different color lids?
That was fun. Maybe I’ll do WIAW again sometime. Sorta a lot of work. So we’ll see.

I made delicata squash last night for the first time. SO good!
Bahahahahaha did you really put curry in your yogurt?? Oh my gosh. That would have to be one of the most unpleasant surprises when you were expecting pumpkin pie!
Yup. Curry in the yogurt. I was not a happy camper.
Aww glad you had fun! I’m now dyingggggg for a rye sandwich of any sort! That stuff is my weakness!!
Hahaha I’m totally putting curry powder in my protein ice cream now! Hahahaha. And I LOVE your lunch sandwich, that’s my absolute favorite sandwich combination!
